Foodie Friday is here! This Vegan, Gluten-Free Mac is so yummy & perfect for a cold night when you're craving that comfort food! Use gluten-free pasta OR if you're wanting whole30/paleo spiralize some veggies like zucchini or butternut squash!
Vegan Gluten-Free Mac
Vegan, Gluten-Free, Dairy Free with a whole30/paleo option
- 1 1/2 cups raw cashews & water
- 3 tablespoons fresh lemon juice
- 1 1/2 teaspoons salt
- 1/4 cup nutritional yeast
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 tablespoon of garlic
- 1/2 teaspoon of seasoning salt (optional)
- 1 cup unsweetened coconut or almond milk
- 16 ounces gluten free pasta or spiralized veggie of choice
- 1/2 steambag package of spinach
Prep cashews before hand by letting them soak in water for a couple of hours.
Cook the pasta according to package directions. If using spiralized veggies toss the them lightly in a pan and cook for for 3-5 minutes or until al dente.
While the pasta/veggies are cooking, combine the cashews, lemon juice, coconut/almond milk, salt, nutritional yeast, garlic, seasoning salt (if using) and onion powder in a blender or food processor and blend until silky smooth. If the mixture is too thick, add 2-4 tablespoons of water or milk and blend again. Heat up packaged spinach according to directions (you can use fresh spinach if you wish!)
Once the pasta is tender, drain and rinse it. Return it to the pot and stir in the cheese sauce and spinach. Season to taste and serve warm!
Now don't go expecting this to taste like the real deal mac n cheese but it is pretty yummy!
